
Tagliatelle with Sausage and Broccoli Low Carb
A hearty first course, rustic but light, with all the taste of tradition and very few carbohydrates. Ideal for those who follow a low carb diet but do not want to give up intense flavors.
🥜 Ingredients (for 1 serving)
- Ros Uni Tagliatelle : 70 g
- Fresh sausage : 60 g
- Broccoli (florets) : 100 g
- Minced garlic : 1 clove
- Vegetable broth : 1/2 cup (about 100 ml)
- Salt and black pepper : as needed
- Extra virgin olive oil : to taste
⚖️ Preparation
🌯 1. Brown the sausage
- In a non-stick pan, heat a drizzle of EVO oil over medium heat.
- Add the crumbled sausage and sauté until golden and cooked through.
- Remove the sausage from the pan and set aside.
🥦 2. Cook the broccoli
- In the same pan, add another drizzle of oil if necessary and sauté the chopped garlic.
- Add the broccoli florets and cook for a few minutes, stirring.
🧪 3. Add the broth and sausage
- Pour the vegetable broth into the pan.
- Add the cooked sausage and cook over medium-low heat until the broccoli is al dente and the sauce has thickened slightly.
- Season with salt and pepper to taste.
🍽 Service
- Cook the Ros Uni Tagliatelle in plenty of salted water following the instructions on the package.
- Drain them al dente, keeping aside a spoonful of the cooking water.
- Transfer the tagliatelle to the pan with the sauce.
- Add the cooking water and stir over medium heat for 1 minute, until the sauce is well combined.
