
Low Carb Crispy Sauce Recipe
π― A creamy, intense and tasty sauce, perfect to accompany burgers, low carb sandwiches or grilled meat. No added sugars and naturally low in carbohydrates.
π§ Ingredients
- Egg yolks : 3
- Peanut oil : 150 g
- Mustard : 50 g
- Tomato concentrate : 30 g
- Pickled gherkins : 3 (about 30 g)
- Desalted capers : 20 g
- Garlic powder : 1 teaspoon
- Salt : 1 teaspoon
- Meat extract : 5 g
- Apple cider vinegar : 10 g (about 1 tablespoon)
βοΈ Preparation
πΏ 1. Prepare the ingredients
- If the capers are not already desalted, rinse them thoroughly under running water to remove excess salt and dry them with kitchen paper.
- Finely chop the gherkins with a sharp knife to obtain a smooth consistency.
π½ 2. Combine the ingredients
- In a large bowl or blender jug, combine the egg yolks, mustard, tomato paste, gherkins, capers, garlic powder, salt, meat extract, and apple cider vinegar.
π 3. Blend and emulsify
- Use an immersion blender (or traditional) and start blending at low speed.
- Pour in the oil very slowly while continuing to blend, to help the emulsion and obtain a smooth and creamy consistency.
π« 4. Make the sauce soft
- Continue blending until you obtain a thick, stable and homogeneous cream.
π½ 5. Taste and adjust
- Taste the sauce: if you want a stronger taste, you can add a pinch of salt or a few extra drops of apple cider vinegar.
π½ How to serve it
Spread 10β15 g of Crispy Sauce on one side of your freshly cooked meat burger or use it as a base for gourmet sandwiches, low-carb wraps or tasty appetizers.
