Low Carb Sandwich Bread with Caprese

Ingredients:

- Low Carb Sandwich Bread : 2 slices (about 50g)

- Tomato: 150g (about 1 large tomato or 2 medium tomatoes)

- Mozzarella: 50g (about half a mozzarella)

- Fresh basil: 5g (about 5-6 leaves)

- Extra Virgin Olive Oil (EVO): 5g (1 teaspoon)

- Salt and pepper: as needed

  

Procedure:

1. Toast the slices of bread :

o Preheat the toaster or an electric griddle to medium.

o Place the slices of bread in the toaster or on the griddle and toast for about 2-3 minutes per side, until golden and slightly crispy.

o Once ready, remove them and leave them to cool slightly on a plate.

2. Prepare the fresh ingredients :

o Wash the tomato well under running water and dry it with a cloth.

o Cut the tomato into slices about 0.5 cm thick. If the tomato is very large, you can cut the slices in half to better fit the slices of bread.

o Drain the mozzarella from its liquid and cut it into slices about 0.5 cm thick.

o Wash the basil leaves and dry them gently with a cloth.

3. Assemble the sandwich :

o Arrange the toasted bread slices on a serving plate or cutting board.
