  • Veal rack : 250 g
  • Extra virgin olive oil : 20 g
  • Garlic : 1 clove (5 g), chopped

  • Fresh thyme : 1 sprig (2 g)
  • Lemon juice : 10 g
  • Lemon zest : 2 g
  • Coarse salt : 5 g
