🍄 Low Carb Mushroom Risotto
A classic of the Italian tradition, in a keto-friendly version.
Ingredients:
- 150 g of Ros Uni Rice
- 200 g of champignon or porcini mushrooms
- 2 tablespoons extra virgin olive oil
- 1 clove of garlic, minced
- 500 ml of hot vegetable broth
- 100 ml of fresh keto cream
- 30 g grated parmesan cheese
- Salt and pepper to taste
- Chopped fresh parsley
Preparation:
1️⃣ Heat the oil in a pan and fry the chopped garlic.
2️⃣ Add the sliced mushrooms and cook until golden.
3️⃣ Pour the Ros Uni Riso and mix well.
4️⃣ Add the hot broth, a ladle at a time, stirring until the liquid is absorbed.
5️⃣ After about 10-12 minutes, add the cream and grated parmesan.
6️⃣ Season with salt and pepper and garnish with fresh parsley.
7️⃣ Serve piping hot!
🥗 Low Carb Rice Salad with Tuna and Vegetables
Perfect for a fresh and light meal.
Ingredients:
- 150 g of Ros Uni Rice
- 100 g of drained tuna in water
- 1 yellow pepper cut into cubes
- 1 grilled and diced courgette
- 50 g of sliced black olives
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Preparation:
1️⃣ Cook the Ros Uni Riso in plenty of boiling salted water for 15 minutes , then drain and leave to cool.
2️⃣ In a large bowl, combine the tuna, vegetables and olives.
3️⃣ Add the cooled Ros Uni Riso and mix gently.
4️⃣ Season with extra virgin olive oil, lemon juice, salt and pepper.
5️⃣ Serve chilled and enjoy as a light meal or side dish!
